Sin embargo, no solo su grano es valioso: en su fase vegetal, conocida como <strong>quintoniles<\/strong>, esta planta aporta un alto valor nutricional. Su consumo brinda <strong>prote\u00ednas, hierro, calcio y vitaminas A y C<\/strong>, contribuyendo a una dieta balanceada y saludable.<\/p>\n\n\n\n<p>En el <strong>Centro de Desarrollo Comunitario Cent\u00e9otl A.C.<\/strong>, a trav\u00e9s del <strong>Centro Demostrativo y de Capacitaci\u00f3n Agroecol\u00f3gica<\/strong>, cultivamos esta planta de manera sostenible y con un enfoque respetuoso con la tierra, para posteriormente distribu\u00edrla de forma justa y solidaria.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Razones para el consumo de la verdura de amaranto<\/h3>\n\n\n\n<p>Consumir la <strong>verdura de amaranto<\/strong>, es de gran importancia en M\u00e9xico, especialmente dentro de dietas vegetarianas y veganas, ya que ayuda a prevenir deficiencias nutricionales comunes en estos reg\u00edmenes. Su <strong>fibra diet\u00e9tica<\/strong> favorece una digesti\u00f3n saludable y contribuye al cuidado de la <strong>salud cardiovascular<\/strong>.<\/p>\n\n\n\n<p>La <strong>verdura de amaranto<\/strong> destaca no solo por su aporte nutricional, sino tambi\u00e9n por su versatilidad en la cocina mexicana. Sus hojas tiernas pueden prepararse en sopas, guisos, ensaladas o incluso como relleno de tamales y quesadillas, ofreciendo un sabor suave y agradable. Incorporarla en la dieta diaria significa aprovechar un alimento local, de temporada y con gran tradici\u00f3n, que al mismo tiempo impulsa pr\u00e1cticas agr\u00edcolas sostenibles y fortalece la <strong>soberan\u00eda alimentaria<\/strong> del pa\u00eds.<\/p>\n\n\n\n<p>Por estas razones, incluir la verdura de amaranto en la alimentaci\u00f3n diaria es una excelente manera de <strong>mejorar la calidad nutricional<\/strong>, apoyar la <strong>econom\u00eda local<\/strong> y <strong>reconectar con las ra\u00edces alimentarias<\/strong> de nuestro pa\u00eds.<\/p>\n\n\n\n<p><strong>Congreso Nacional de Amaranto<\/strong><\/p>\n\n\n\n<p>La revaloraci\u00f3n de la verdura de amaranto es tambi\u00e9n parte de un movimiento m\u00e1s amplio por rescatar este cultivo ancestral. Por ello, te invitamos a ser parte del <strong>4\u00ba Congreso Nacional del Amaranto: \u201cRescatando un Cultivo Ancestral\u201d<\/strong>, que se llevar\u00e1 a cabo los d\u00edas <strong>17 y 18 de octubre<\/strong>.<\/p>\n\n\n\n<p>En este encuentro se reunir\u00e1n productores, investigadores, cocineros y comunidades para compartir saberes y experiencias en torno al amaranto en todas sus formas: semilla, verdura y derivados.
