El aporte de Prote\u00edna de Amaranto en la nutrici\u00f3n principalmente de ni\u00f1os y mujeres en el estado de Oaxaca a trav\u00e9s de la producci\u00f3n para el autoconsumo es una estrategia que desde la sociedad civil hemos impulsado desde el Centro de Desarrollo Comunitario Cent\u00e9otl A.C. ya hace 20 a\u00f1os, a la par del impulso a la producci\u00f3n de excedentes para generar un sistema productivo alternativo para las familias campesinas de Oaxaca.<\/p>\n<p>Lamentamos que desde la pol\u00edtica p\u00fablica, el Amaranto siga olvidado a nivel estatal y nacional, a\u00fan a costa de ello, seguiremos campesinos y organizaciones rescatando el cultivo y consumo del Amaranto como planta y alimento estrat\u00e9gico, como medio para dignificar la seguridad alimentaria de nuestras familias, pues, no es casualidad que la Organizaci\u00f3n de las Naciones Unidas para la Alimentaci\u00f3n y la Agricultura (FAO) posiciona al Amaranto como Cultivo Tradicional del Mes.<\/p>\n<p>El rumbo est\u00e1 trazado, es justo y humano, nuestra herencia cultural es una gran fortaleza que hoy m\u00e1s que nunca debemos aprovechar y fortalecer, son m\u00e1s de 10,000 a\u00f1os de domesticaci\u00f3n de una planta que representa la mejor alternativa para abatir los indicadores de desnutrici\u00f3n en la poblaci\u00f3n de nuestro estado.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>En la \u00e9poca Prehisp\u00e1nica \u00e9sta noble planta constituy\u00f3 la principal base de aportaci\u00f3n de Prote\u00edna en la alimentaci\u00f3n de nuestros antepasados a la par del ma\u00edz, el frijol y otros cultivos; representa un gran aporte de M\u00e9xico a la humanidad, con 2 de 3 especies cultivadas (cruenthus e hypochondriacus).
