{"id":4427,"date":"2017-08-18T16:09:33","date_gmt":"2017-08-18T22:09:33","guid":{"rendered":"http:\/\/centeotl.org.mx\/web\/?p=4427"},"modified":"2017-08-18T16:09:33","modified_gmt":"2017-08-18T22:09:33","slug":"un-tesoro-llamado-amaranto","status":"publish","type":"post","link":"https:\/\/centeotl.org.mx\/web\/un-tesoro-llamado-amaranto\/","title":{"rendered":"Un Tesoro llamado Amaranto!"},"content":{"rendered":"<p>Cuando iniciamos con la promoci\u00f3n del cultivo y consumo del amaranto en 1996, en Oaxaca el INIFAP estaba dejando de lado la investigaci\u00f3n y promoci\u00f3n del cultivo de este falso cereal (se dice as\u00ed porque para ser un cereal deber\u00eda tener la hojas como los pastos, es decir como el ma\u00edz, la avena, el arroz, el trigo, entre otros), que ha mostrado grandes bondades nutritivas. A nosotros el INIFAP nos regal\u00f3 un peque\u00f1o costal de semilla de Amaranto de la Variedad Revancha, que seguimos produciendo con las familias campesinas hasta la fecha.<\/p>\n<p>Este cultivo es originario de Mesoam\u00e9rica en donde se domesticaron 2 de las 3 de las Especies cultivadas: <em><u>Amaranthus hipochondriacus \u00a0y Amaranthus cruentus<\/u><\/em>.<\/p>\n<p>La otra especie de amaranto es el <em><u>Amaranthus caudatus<\/u><\/em> que se cultiva en la regi\u00f3n de Los Andes Sudamericanos \u00a0y se comercializa como planta de ornato, principalmente en Europa y Norteam\u00e9rica.<\/p>\n<p>Para promover este cultivo no nuevo en nuestras regiones de trabajo pero si desaparecido hemos echado mano de diferentes materiales, uno de los cuales seguimos usando hasta la fecha, lo realiz\u00f3 nuestro compa\u00f1ero caricaturista y Fundador del Centro de Desarrollo Comunitario \u201cCent\u00e9otl\u201d AC, Oth\u00f3n Cuevas C\u00f3rdova, \u00a0fue parte de \u201cEl Tequio\u201d, revista mensual que informaba sobre el quehacer de la Organizaci\u00f3n, esto en 1999. En esta ocasi\u00f3n adjuntamos las fotos de aquella edici\u00f3n especial dedicada al amaranto y que se llama, \u201cUn Tesoro llamado Amaranto\u201d en el que se hace menci\u00f3n del valor alimenticio, agroclim\u00e1tico, econ\u00f3mico y culinario de esta planta milenaria. Para quien inicia trabajos con amaranto, le recomendamos imprimir las fotos, armar el cuadernillo y compartirlo con las familias con quienes trabaja, gusta mucho a las personas y hasta los ni\u00f1os
